Fun Food Monday – Irish Soda Bread

Here’s another recipe from Nancy’s recipe box. I should have made this for St. Patricks day to go with the Corn Beef and Cabbage. But it sounds good any old time.

1 ½ cups all-purpose flour
½ cup whole wheat flour
2 TLBS cold butter
1 cup 1% buttermilk
1 TBLS sugar or the equivalent Splenda
½ baking soda
½ cup dried currants
½ salt

In a large bowl, combine the flours, sugar, baking soda, salt; cut in butter. Stir in buttermilk just until moistened. Fold in currants. Knead on a floured surface 8-10 times. Shape into a 7 inch round loaf; place on a baking sheet coated with cooking spray.

Bake at 375 20-25 minutes or until a toothpick inserted in the center comes out clean.

Makes 1 loaf (12 slices)
