TACO SOUP

Jack and I both like soup and there’s no better time than January and February. Nancy sent me this one. She’s cleaning out her recipe folder and I’m looking forward to getting more of them from her.

1 ½ pounds ground beef
½ cup chopped onion
1 can (28 ounces) whole tomatoes with juice
(I put these in the blender)
1 can (14 ounce) tomato sauce
1 can kidney beans
1 can corn
1 package taco seasoning
1 to 2 cups water
Salt, pepper to taste
1 cup grated cheddar cheese

Brown beef in large, heavy kettle; drain and add onions. Cook until onions are tender. Add remaining ingredients except cheese; simmer for 30 minutes. Ladle into bowls; top with the grated cheese. Serve with salad and Scoops (chips).

  1. Made this for Super Bowl Sunday but added Black Beans to this. Ate almost all of it, Daisy especially likes it on her dog food!!!

  3. Oooh, I just thought of something else as a side with the soup. Fried tortilla strips. Cut a tortilla into strips (whatever size you like) and fry them in a little oil until lightly browned (less than a minute, if I remember right – I do a small handful at a time). You can lightly salt or not as you prefer.

    Laurie, Tortilla strips sound like a great accompaniment for this soup. Like Nancy’s black beans adding things to the menu or altering a recipe makes for great eating.
