Fun Food Monday – Hash Browns and Bacon Casserole

This is a good casserole when you want to make it ahead.

• 3 Tbsps oil
• 2 lbs frozen hash brown potatoes
• 1 onion, chopped
• 1 green pepper, chopped
• 1 red pepper, chopped
• 9 slices bacon, fried
• 10 eggs, beaten

• Salt & pepper, to taste
• 1 1/2 cups Cheddar cheese, shredded

Heat oil in large skillet. Add hash browns, onion, and bell peppers. Cook until potatoes begin to brown. Pour beaten eggs over all and season to taste with salt and pepper. Gently stir to coat all ingredients with eggs.
Spray 9″ x 13″ baking dish with Pam. Spread potato mixture in pan. Top with bacon. Sprinkle with cheese. Refrigerate overnight. Bake uncovered at 375 degrees for 35 minutes.

  1. I love recipes like this. We do something very similar at the family cabin event each January. I love being able to prepare it the night before and just pop it in the oven the next morning.

  2. Sounds wonderful- I agree with Laurie about the night before thing. We always do Christmas breakfast at my parents’ house- I’m gonna put this in my Christmas folder!

  3. Mmm, sounds great! One I’ll definitely have to try.
