Food Fun Monday – Baked Chicken Dijon

Here’s a quick and yummy chicken recipe:

  •  6 half boneless chicken breasts
  • 3 Tablespoons Dijon
  • 1/2 cup butter, melted
  • 1 clove garlic, minced
  • 1/3 cup parsley, minced
  • 1 cup shredded or grated parmesan cheese
  • 2 cups bread crumbs (I only use one cup)

Mix parsley, parmesan, and bread crumbs in a bowl big enough to coat chicken in.  In another bowl (same size), mix butter, Dijon, and garlic.  Spray glass 13 x 9 baking pan with cooking spray. Dip chicken in butter mixture, then in cheese/crumb mixture. Place in baking dish.  (Chicken may be refrigerated at this point for several hours, covered.)

Bake uncovered at 350 degrees for 30-45 minutes, until golden brown.
