This is a great way for using up whatever is available.
Jam to taste (jelly in the US I think)
Chocolate shavings or vermicelli
And of course rum to flavour.
Mix the cake crumbs and jam, with melted chocolate until a suitable consistency is reached. You should be able to roll them into balls without them breaking apart. Flavour as required with rum. Dark rum preferred.
Dip the rum truffles into melted chocolate and then roll into various coatings. Chopped nuts, chocolate vermicelli, or chocolate shavings. Place in a refrigerator to harden, and then serve in paper cases. Dust with icing sugar for added Christmas appeal.
