Food Fun Monday – Janette’s Cake

I know we’re heading into the holiday season and I should probably do sugar cookies or some such thing, but this recipe has been waiting a few weeks on my desk for an opportunity to share it.  Our good friends, Anne and Matt, in Canada gave us this cake recipe and it is yummy!

Janette’s Cake

  • 1 cup sugar
  • 2 cups flour
  • 2 eggs
  • 1 cup chopped nuts (walnuts or pecans)
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 – 20 ounce can crushed pineapple, juice and all

Grease 9 X 13″ pan.  Mix flour, sugar, baking soda in one bowl.  In another bowl, mix pineapple, eggs, and vanilla together and pour into flour mixture.  Add chopped nuts and stir until blended (mixture is thick).  Spread in 9 x 13 pan and bake for 35-45 minutes at 350 degrees.


  • 1/2 package cream cheese
  • 1/2 stick butter
  • touch of vanilla
  • 1 1/2 to 2 cups powdered sugar

Let both sit out to soften, then mix with vanilla. Add powdered sugar until you get the right consistency for icing. Spread on cooled cake and sprinkle chopped nuts on top.
